I don’t fancy myself much of a baker. At one point in my life, I was a dessert fiend, baking chocolate chip cookies and other sweet treats every weekend. These days, however, I always manage to mess up any baked goods. I’ve forgotten to add eggs to peanut butter cookies, burned the edges of chocolate-peanut butter bars, and neglected to add baking powder to muffins. So when I signed up to participate in a recipe swap on one of my favorite websites and was assigned to make a recipe from a blog entirely about baking, I was pretty nervous! But after browsing Eva Bakes, I was happy to find this recipe for Two-Minute Chocolate and Caramel Mug Cakes, which seemed impossible to screw up…right?
Right. This quick little cake took minutes to put together, making it a perfect solution if you want a fast dessert and you happen to have the typical baking ingredients in the house. I didn’t have any caramels, so I skipped that part (but I bet it would be delicious!)
Chocolate and Caramel Mug Cakes
Recipe from Eva Bakes
I like this recipe because it’s easy to make one or two servings and it only takes minutes to create a sweet treat (that doesn’t come from a box!)
4 tablespoons all-purpose flour
4 tablespoons sguar
3 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg, beaten
3 tablespoons milk
1 tablespoon vegetable oil
2 salted caramels
3 tablespoons milk
1 tablespoon vegetable oil
2 salted caramels
Combine the flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil in a small bowl, mixing thoroughly. Pour it into a standard-sized coffee mug and drop the caramels in the center of the mixture, one at a time.
Put mug in the microwave and cook for one minute, 30 seconds. If the batter is still slightly gooey, continue to microwave for an additional 30 seconds until its reached the desired consistency.
